Organic durum wheat semolina pasta dried from 72 to 144 hours in static cells at temperatures below 38°C to facilitate digestibility and preserve its organoleptic qualities. Any irregularities in size, cut or color are typical indications of handcrafted pasta. Pasta extruded with bronze molds handed down for generations.
